Italienischer Brasato aus dem Dutch Oven - Stüssi Style

Zuerst streiche ich den Braten auf beiden Seiten mit Stüssi’s Bbq Rub ein.

Danach giesse ich Olivenöl in die vorgeheizte Gusspfanne und gebe eine Knoblauchzehe hinzu.

Nun brate ich die Rinderschulter für zwei Minuten im heissen Öl an.

In der Zwischenzeit hacke ich die Karotten, den Lauch und die Zwiebeln grob und gebe danach alles in die Pfanne neben das Fleisch.

Wenn der Braten angeröstet ist, wende ich ihn.

Nun hacke ich den Wirz grob, nehme einen Esslöffel Sellerie und teile eine Kartoffel in acht gleich grosse Stücke.

Diese Zutaten gebe ich ebenfalls in die Gusspfanne.

Zu guter Letzt gebe ich noch Salbei (ohne Blätter), ein Lorbeerblatt und Rosmarin dazu und rühre alles zusammen um.

Ist das Fleisch angebraten, lösche ich es mit einem ordentlichen Gutsch Rotwein ab.

Nun schliesse ich sowohl den Deckel vom Dutch Oven wie den Deckel vom Grill und pendle die Temperatur auf 180 Grad ein.

Den Brenner unter der Pfanne stelle ich aufs Minimum ein, sonst wird die Pfanne zu heiss.

Nach zwei Stunden ist der Brasato fertig, und ich nehme die Gusspfanne vom Grill.

Nun schneide ich das Fleisch auf und richte es an.

Zu guter Letzt leere ich die Rotwein-Bratensauce über das Fleisch und dekoriere es mit drei Salbeiblättern.

Italian Braised Beef Casserole

Italian braised beef casserole - Stüssi Style!

First, marinate the joint on both sides with Stüssi’s Bbq rub mix.

Then pour olive oil in a pre-heated cast-iron skillet pan and add cloves of garlic.

Fry the shoulder of beef for two minutes in hot oil.

Meanwhile, roughly chop a carrot, leek and an onion and then add to the pan next to the meat.

Brown both sides of the joint.

Roughly chop the savoy cabbage, celery (approx a tablespoon) and divide a potato into eight equal-sized pieces.

Add these ingredients to the pan too.

Then add sage (minus the leaves), a bay leaf and rosemary and stir everything together.

Once the meat is browned, add a fair amount of red wine.

Close the lid of the casserole dish as well as the bbq and turn the temperature to 180 degrees.

Turn down the heat to its minimum setting to avoid the pan getting too hot.

After 2 hours, the braised beef is ready, so remove the pan from the bbq.

Cut the joint and arrange on a plate.

Lastly, pour the red wine gravy over the meat and decorate with three sage leaves.
